If they are not careful, it may lead to health crisis. Japanese restaurant Tomoka Suga introduced the NG behavior of using three types of chopping boards.

NG behavior 1: Clean the chopping board that has been cut through meat or fish with hot water

Many people believe that using hot water can kill bacteria and make the chopping board cleaner, but in fact, the protein of fish and meat will solidify at high temperature. If washed with hot water immediately after processing the meat or fish, the protein will solidify, making it more difficult to remove dirt. Therefore, when cleaning the cutting board, cold or warm water should be used.
